Freshness - Freshness - Freshness. Coffee, in general, works on the rule of three. Beans are to be roasted within 3 months of harvest. Beans are to be ground within 3 weeks or roasting. Beans are to be brewed within 3 minutes of grinding.
Why these 3 rules are so important can be explained from a few points of view:
From the point of picking a coffee cherry, it is a race against time minimise the loss of flavour and quality from the bean. All we can do from that point on is minimise the loss of flavour by careful actions.
From the growers point of view, to wash and dry the coffee as quickly as possible ready for export.
From the roasters, to hand roast the coffee in individual batches using years of experience to know when the roast has brought out the right elements and then to deliver it to the customer in prime condition.
Finally, the brewer to ensure it has been ground consistently, tamped appropriately and brewed for the right time, at the right temperature for bring out the flavours that are packed into that tiny bean.
